The Easiest & Most Delicious Hashbrowns

Crispy on the outside, soft on the inside - these easy, cheesy hashbrowns are the perfect golden bite for any meal! Far more nutritious than store-bought versions - no hidden additives, just simple wholefood ingredients.

Ingredients


(Makes approx 12)


  • 4 potatoes, grated

  • 1 egg, whisked

  • 2 tablespoons plain flour

  • ¼ red onion, finely diced

  • ½ cup parmesan cheese, grated

  • Salt and pepper, to taste

  • Olive oil, for frying

  • Fresh parsley, to serve


Method

  1. Preheat your oven to 120°C and line a baking tray with baking paper.

  2. Grate the potatoes and squeeze out the excess liquid using a colander or clean kitchen cloth (like a blue Chux).

  3. Place the grated potato in a large bowl. Add the egg, flour, red onion, parmesan cheese, salt, and pepper. Mix well until combined.

  4. Heat olive oil in a frying pan over medium heat.

  5. Divide the mixture into equal portions and spoon them into the pan. Flatten each portion gently with the back of a spoon.

  6. Cook until golden brown on both sides, then transfer to the prepared baking tray.

  7. Place the tray in the oven and keep the hashbrowns warm while ensuring they cook through and crisp up further.

  8. Season with extra salt and sprinkle with chopped parsley before serving.


Tip: Add any extra grated vegetables or herbs you might have in the fridge for extra flavour or nutrients.


Serving suggestion: Serve alongside a poached egg and smoked salmon or crispy bacon, avocado, or roasted truss tomatoes for a perfect breakfast at home.
