Quick & Easy Veggie-Packed Rissoles

Ready in under 30 minutes, these rissoles are quick, easy and taste absolutely delicious! Loaded with hidden veggies and everyday ingredients you most likely already have at home.
Ingredients
500 g beef mince (this is all I had to buy when I made these!)
½ onion, finely diced
1 tsp garlic, minced
1 egg
1 cup breadcrumbs
1 small carrot, grated
1 cup spinach, finely chopped
1 tbsp tomato sauce
1 tbsp Worcestershire sauce
½ tsp cracked black pepper
1 tsp salt
Method
In a large bowl, combine the beef mince, onion, garlic, egg, breadcrumbs, carrot, spinach, tomato sauce, Worcestershire sauce, pepper, and salt. Mix well until everything is evenly combined.
Roll the mixture into even-sized balls, then flatten slightly to form patties (makes about 10).
Heat a frying pan over medium heat with a drizzle of oil. Cook the rissoles for 4–5 minutes per side, or until golden and cooked through.
Enjoy with a simple salad, steamed veggies (such as green beans or broccoli), or mashed sweet potato and home-made gravy. They’re also delicious cold in wraps with salad and tzatziki or lunchboxes the next day.
💡 Tip: To freeze, layer uncooked rissoles with baking paper in an airtight container. Cook straight from frozen, adding a few extra minutes to the cooking time.
