Try our quick & easy Carbonara recipe. You probably have most of these ingredients in your fridge already!
INGREDIENTS
Dried spaghetti
4 bacon rashers
Extra virgin olive oil
3 eggs
Grated parmesan cheese
Salt & pepper
Parsley
METHOD
Cook the pasta in boiling salted water following packet instructions.
Dice the bacon & cook on medium heat in a non-stick frying pan with a small amount of olive oil.
Once bacon is crispy & golden, leave in pan with heat turned down to low.
Beat the eggs. Mix in parmesan cheese, salt & pepper.
Once pasta is cooked, using tongs, transfer your pasta into the pan with the bacon.
Tip: Do not pour out the pasta water. You need this to loosen the sauce.
Pour in the parmesan cheese & egg mixture into the pasta, keep heat low to avoid scrambling the eggs.
Keep mixing this through the pasta adding small amounts of pasta water where necessary.
Plate up the pasta.
Finish with parmesan cheese and parsley.
Add any vegetables you might have sitting in your fridge already (for example mushrooms, zucchini, onion or spinach).
